1- Coat filet all over with olive oil, chopped
garlic, and cayenne pepper (only on skinless side).
Let filet sit for 5 minutes to soak in spices.

Grill filet on skinless side for 5-6 minutes. Flip
the filet and grill the skin side for 3-4 minutes.
3- SAUCE: in a pan, roast a touch of butter and
chopped garlic for 30 seconds. Add the fresh chopped
tomato, chopped red onion and saute for 1 minute.
4- At low heat, add a squeeze of lemon juice, and
of white wine.
5- Serve along side grilled vegetables and rice
or mashed potatoes.
6- Suggested grilled vegetables: asperagus, red
and yellow peppers, zuchini, fresh corn, all marinaded
in olive oil, and salt pepper.
